Growing up in the 90s, I remember when rotisserie chicken was the hottest thing at the grocery market! To this day, rotisserie chickens sell out all the time! It was an easy meal for my hardworking mom to pick up and feed us along with rice, beans and tortillas. Ahhh the memories!
Here's a recipe to try making it at home and in an air fryer complete with a delicious herb and spice butter with a little zest. I am obsessed with my Ninja Foodi (click on the link to check it out) that I bought from Amazon and it's been a space-saver. Another product that is a game changer is the Microplane Zester that helps me get the most zest of out my citrus!
Here's what you need:
Ingredients:
1 whole chicken (5lbs)
1/2 stick butter, soften
4 garlic cloves, minced
1 TSP Garlic Powder
1 TSP Black Pepper
1 TSP Smoked Paprika
1/2 TSP Cayenne Pepper
1/2 TSP Thyme
1/2 TSP Salt
1 lemon, zested
Avocado Oil Spray
Directions:
Step 1: Prepare the chicken by taking out any innards in the chicken cavity.
Step 2: Chop the garlic into a mince and set aside.
Step 3: Using the Microplane Zester or a cheese grater, grate the whole lemon and set the lemon zest aside.
Step 4: In a small bowl, measure out and mix the garlic powder, black pepper, smoked paprika, cayenne pepper, thyme and salt and mix together.
Step 5: Add the lemon zest to your spices mix.
Step 6: In another small bowl, put the half stick of butter and microwave for 15 second increments until the butter is soft. Then add the spices and zest mix into the soften butter.
Step 7: Using a silicone brush, dip it into the spiced herb and coat the chicken generously until the whole chicken is coated in the spiced butter.
Step 8: Your chicken is now ready to be air fried! Set your air fryer to 360 degrees for 50 minutes and place the chicken with the breast side down.
Step 9: After 50 minutes, flip the chicken and let it cook for about 10 more minutes. Be sure to double check the internal temperature of you chicken to make sure it's at 165 degrees internally so that it's thoroughly cooked. Cook for longer if needed.
Step 10: Enjoy with a side salad or roasted veggies!
