Growing up in a Latino household, there was always a barbecue in the summer months to celebrate family and togetherness with delicious Carne Asada! I remember my uncles would get creative marinating the arranchera, or skirt steak/flank with a beer or a Coke to tie in all the flavors of the meat. Follow my marinade below to get delicious Carne Asada ready for tacos!
Note: If you have access to a grill, keep the steak in large pieces then chop up into bite sizes after grilling. If using a skillet, chop up the meat before cooking!
Here's what you'll need:
Marinade Ingredients:
1/2 bottle of shock top OR 1/2 can of Coca-Cola
Juice of 1 orange
Juice of 2 limes
6 cloves of minced garlic
1/4 of red onion, sliced
Y1/4 cup of Yellow Mustard
1/4 cup of Worcestershire sauce
1/2 bunch of cilantro diced
2 TBSP Oil
1 TSP Paprika
1 TSP Cumin
1 TBSP Garlic Salt
1 TSP Pepper
Toppings: Cilantro, Onions and your fav Salsa!
Directions:
Step 1: Prepare your flank or Arrachera steak by chopping into bite size or 1 inch pieces then put the chopped meat in a large bowl. *NOTE: Follow this step if you are NOT grilling!
Step 2: Add about 1/4 cup of mustard and using your hands or tongs, toss the steak in the mustard until all pieces are coated.
Step 3: In the same bowl, add 1/2 bottle of ShockTop beer, and enjoy the other half ;).
Step 4: Cut the oranges and limes in halves and squeeze the juice onto the meat in the bowl.
Step 5: Next add the oil, minced garlic and Worcestershire sauce and toss the steak until all pieces are coated.
Step 6: Chop 1/4 of a red onion into slices and add to the steak marinade.
Step 7: Then add the chopped cilantro paprika, cumin, garlic salt and pepper and toss until the meat is evenly coated.
Step 8: Cover the bowl with plastic wrap or aluminum and place in refrigerator. Let the marinade sit for at least 1 hour. NOTE: You can also marinade over night, the longer the marinade, the more flavor your steak will have!
Step 9: Remove bowl from the fridge. In a large skillet, use spray oil to coat the bottom of the skillet and set heat to medium high. Let the pan get hot before adding meat.
Step 10: Carefully add the marinade steak and let it cook for about 5 minutes on one side of until it’s cooked then flip. Carne Asada steak can char and will have that flavor of a legit BBQ!
Step 11: Repeat this step to cook all the steak.
Step 12: Prepare your taco fixings such as warming up the tortillas, diced fresh cilantro, diced onions and your favorite salsa, lime wedges and radishes are good sides for tacos as well.
