An easy dinner to make any day of the week and healthy too! Salmon is rich in omega-3 fatty acids, which have been shown to reduce inflammation, lower blood pressure and decrease risk factors for heart disease.
Ingredients:
4 salmon filets (defrosted or fresh)
4 TBSP minced garlic
4 TBSP pesto sauce
1 TBSP paprika
1 TSP cayenne pepper
1/2 stick of butter
Salt & Pepper TT
Directions:
Step 1: Preheat oven to 400 degrees and spray a baking sheet with oil.
Step 2: Set salmon filets on the baking sheet and add salt, pepper, paprika and cayenne pepper on top of the filets.
Step 3: Slice the butter into 4 slices 1/4 inch slices and set on top of each filet.
Step 4: Add 1 tablespoon of pesto to each filet
Step 5: Put the baking sheet into the oven and let the fish bake for 10 mintues.
Step 6: After 10 minutes, set the oven to broil and let it cook for 5-7 more minutes or until pesto is lightly charred.
