I've been making flautas since college, when one of my friends taught me how her mom made them and ever since then, I've been hooked! These are essentially chicken taquitos that quick to make for any meal.
Ingredients:
2 chicken breasts, shredded OR 1 rotisserie chicken shredded
12-18 corn or flour tortillas
Toppings:
Crema Mexicana
Queso Fresco
Diced Tomatoes
Your favorite salsa
Fresh avocado
Step 1: Shred the chicken so that it's ready to put into the tortillas
Step 2: Warm up the tortillas in the microwave for about 30 seconds or until the tortillas are tender
Step 3: On a plate, place a tortilla and a handful of shredded chicken on the edge of the tortilla and roll up the tortilla. Be sure to lay the pre-cooked flauta with the edges side down.
Step 4: In a deep pan add about 1/4 cup of oil such as grapeseed or avocado oil and hear up over medium heat.
Step 5: Once the oil is hot, careful add each flatua into the oil with the edge side down using tongs. Add about 4-5 flautas to your pan, but be careful. not to overcrowd your pan.
Step 6: Let the flautas cook for about 3-5 minutes or until golden brown. Then flip the flautas so that they fry on the other side.
Step 7: Once the flautas have been fried on both sides, remove from oil and put on a plate and repeat steps 5-7 until all flautas are cooked.
Step 8: When all flautas are cooked, serve and top with your favorite salsa, crema Mexicana, queso fresco, fresh tomatoes and avocado slices. All toppings are optional!
