Easy One-Pan Lasagna Skillet

I grew up with eating Stouffer's frozen lasagna about once a week and thought it was the best thing ever...that is until I was introduced to homemade lasagna and my taste buds went wild! Here is an easy recipe to have all the flavors of lasagna but not all the labor. Here's what you'll need:


Ingredients:

1 LB ground Italian sausage or ground beef

1(28 ounce) can crushed tomatoes

1(6 ounce) can tomato paste

½ yellow onion, diced

Goat cheese

1 cup mushrooms, chopped

2 cups spinach, roughly chopped

¾ pound lasagna noodles, broken (1 box)

1 cup mozzarella cheese, shredded

Parmesan cheese

2 garlic cloves, minced


Spices:

½ tsp dried basil

1 TSP dried oregano

1 TSP dried thyme

1 TSP dried parsley

NOTE: You can use Italian seasoning mix instead!

½ tsp salt

½ tsp ground black pepper


Toppings:

Mozzarella cheese

Goat cheese

Ricotta cheese

Parmesan cheese

Fresh basil


Directions:

Step 1: *NOTE: Do this step if you are using regular lasagna noodles. Skip if using oven-ready noodles. In a large pot over high heat, fill it up halfway and bring it to a boil. Once the water is boiling, add the broken lasagna noodles for 7-10 minutes or until they are tender.

Step 2: In a large skillet, add the ground sausage and cook over medium heat while stirring. Once the sausage is mostly cooked add the diced onion to cook.

Step 3: When the onion is translucent and sausage is cooked through add the minced garlic. Cook for an additional 30 seconds.

Step 4: Add the tomato sauce and diced tomato to the skillet. Stir to combine.

Step 5: Add all the spices and mix together.


Step 6: NOTE: If using oven-ready lasagna noodles follow the next step! Break the lasagna noodles over the skillet and add to the sauce.


Step 7: Add the boiled broken lasagna noodles and mix into the tomato sauce. Cover the pan and allow to simmer over medium heat for about 5 minutes, stirring occasionally.


Step 8: In a small bowl, mix the goat cheese and ricotta cheese and set aside.

Step 9: Next, add in a cup of mozzarella cheese. Stir to combine.

Step 10: Top with additional mozzarella cheese, dollops of ricotta & goat cheese mix, and fresh parsley and enjoy!
