Garlic Butter Steak w/ Zoodles
A dish full of flavor that is easy to make any day of the week!
Ingredients:
1 LB sirloin steak cut into small cubes
4 medium zucchinis, spiralized (or 1 pack Zoodles)
1 TBSP avocado oil
3 TBSP butter, divided
2 TSP minced garlic
1/4 cup beef broth
1 TBSP dried parsley
1 TSP fresh thyme leaves (or dried)
1/2 TSP red chili pepper flakes, (optional)
Marinade Ingredients:
1/4 cup low-sodium soy sauce
1 TBSP avocado oil
1 TBSP Sriracha
Black pepper, TT
Juice of 1/2 lemon
Directions:
Step 1: Cut up the steak in bite sizes and put in a large mixing bowl.
Step 2: Combine the soy sauce, olive oil, hot sauce, pepper, and lemon juice) and add the steak bites. Mix well and marinate for at least 20 minutes.
Step 3: Prepare your zoodles by using a spiralizer to get the noodles. You can skip this step if you have store bought zoodles. Mince the garlic if needed. *Add salt to the zoodles to absorb any excess water.
Step 4: In a large skillet or cast iron skillet, heat the avocado oil over high heat. Drain steak bites from the marinade, BUT be sure to keep the remaining marinade to add later.
Step 5: Place the steak pieces in the skillet in a single layer. Be sure not to overcrowd the skillet or meat will steam, (NOTE: Work in smaller batches for an even sear on meat.) Cook steak bites for 3-4 minutes, stirring occasionally until steak bites are golden brown. Repeat with remaining steak bites as needed.
Step 6. Once all the steak bites are golden brown, add all the steak pieces back to the skillet. Then, add 2 tablespoons of butter and garlic. Cook for 1-2 minutes, making sure to coat the meat in the garlic butter. Remove the steak bites to a shallow plate and set aside. Step 7: In the same skillet, add 1 TBSP butter, lemon juice, red pepper flakes, beef broth, dried parsley, and remaining marinade juices. Bring to a simmer and allow the sauce to reduce for 2-3 minutes, stirring regularly. Step 8: Add the spiralized zucchini noodles and toss for two to three minutes to cook it up. Stir in the fresh thyme, then allow the cooking juices to reduce for one minute.
Step 9: Serve immediately your garlic butter steak pieces with the zoodles.
*Note: Feel free to use any cut of steak you like such as tenderloin or rib eye.
