Spicy Sausage Tortellini Soup

I have been making this soup for more than 10 years and it’s definitely one of my favorite recipes! The way the tomatoes, sausage and spices mix together with the cheese tortellini is addicting. I hope you enjoy it as much as I do! For a non-spicy version, use Italian sausage and regular tomato sauce.


Ingredients:


4 andouille sausages, chopped in rounds

4 cloves garlic, minced

1/2 yellow onion

5 cups beef stock

⅓ cup water

½ cup red wine

1 (15oz) can diced tomatoes

1 TSP dried basil

1 TSP dried oregano

1 TSP dried Parsley

1 cup El Pato tomato sauce (or 1 cup tomato sauce for non-spicy)

1 zucchini, diced

20oz box of 3-cheese tortellini pasta

2 tablespoons grated Parmesan cheese for topping

Directions:


Step 1: Prep and dice your veggies and chop the andouille sausage in rounds.

Step 2: Place the chopped andouille sausage in a Dutch oven or large pot, over medium high heat and sauté for 10 minutes, or until sausage is browned. Add the onions and garlic and sauté for 5 more minutes or until garlic is fragrant.

Step 3 Next, add the beef stock, water, wine, diced tomatoes, basil, oregano, parsley and tomato sauce. Bring to a boil, then, reduce heat to low and simmer for 20 minutes, skimming any excess fat that may surface.

Step 4: Add the zucchini and tortellini. Let it simmer for 10 minutes, or until tortellini is fully cooked. Pour into individual bowls and garnish with parmesan cheese.
