Sweet Potato & Black Bean Tacos

These tacos are easy to make, delicious and nutritious! It’s full of healthy fats and tons of fiber from all the veggies included! Below is the recipe for the tacos and the pepitas guacamole.

Using a food processor or blender will help you get the creamy consistency that is perfect for topping your tacos!


Ingredients:


For Sweet Potatoes

3 medium sweet potatoes, peeled and sliced into chunks

2 TBSP avocado oil

1/2 TSP cayenne pepper (omit if sensitive to spice)

1 pinch of salt


For Black Beans

1 TBSP olive oil

1 small yellow onion, diced

2 TSP ground cumin

1/2 TSP chili powder

1 can black beans, rinsed and drained (or 2 cups cooked black beans)

1/4 cup water

Juice of 1 lime

Pepper TT


Pepita Avocado Guac

2 avocados, pitted

1 cup lightly packed fresh cilantro leaves

1/3 cup toasted pepitas (husked pumpkin seeds)

1 small jalapeño, seeded

4 cloves garlic

Juice of 1 lime

Salt & Pepper TT


Taco Assembly

8 to 10 small corn tortillas

Mexican Crema


Directions:


Step 1: Peel potatoes and dice into 1-inch cubes.


Step 2: In a large pot, add water, diced sweet potatoes and a pinch of salt over medium heat and cook for 15 minutes or until potatoes are tender.

Step 3: While sweet potatoes are boiling, dice onions and then in a large pan, heat up avocado oil and add diced onions and cook for 3 minutes until onions are translucent.


Step 4: Add beans, cayenne, chili powder, cumin, salt and pepper and mix together to cook for 5 minutes.


Step 5: Once sweet potatoes are done boiling, drain the water from the sweet potatoes and add to pan with beans and combine and let simmer for 5 minutes then remove from heat.


Step 6: To prepare the guacamole, in a large bowl spoon out avocado then roughly chop cilantro leaves, jalapeño, garlic cloves and add to bowl.


Step 7: Toast the pepitas in a pan over medium heat and move around every few minutes. Once pepitas start popping, they are done toasted.


Step 8: Add to blender or food processor the toasted pepitas and avocado, cilantro, jalapeño, garlic, lime juice, salt and pepper.


Step 9: Blend ingredients together, add more salt and pepper if needed, and add 1 TBSP of water or more for a creamier consistency.


Step 10: Toast your tortillas and then assembly your tacos!
